Superb fizzy cocktail. It's traditionally made with Prosseco rather than Champagne, but any high quality fizz will do the job well.
Bubbles form in the flute glass of a mouth watering Bellini cocktail.
Fill a Flute with ice and water to chill it for a moment, before discarding. Build the cocktail in the chilled glass.
Measure 1 shot of Peach Puree and add to the glass.
Gently stir.
Taste the cocktail and if necessary adjust the balance with a touch of extra sugar or citrus juice.
Garnish the cocktail with a peach slice.
