Bellini

Superb fizzy cocktail. It's traditionally made with Prosseco rather than Champagne, but any high quality fizz will do the job well.

Quick Guide

Mix

Build in the glass, add the Peach Puree, top up with Champagne and gently stir.

Serve in a Flute glass and garnish with a peach slice.

Fill a Flute with ice and water to chill it for a moment, before discarding. Build the cocktail in the chilled glass.

Measure 1 shot of Peach Puree and add to the glass.

Top up the glass with Champagne.

Gently stir.

Taste the cocktail and if necessary adjust the balance with a touch of extra sugar or citrus juice.

Garnish the cocktail with a peach slice.
